Sour Cream Mashed Potatoes (Holiday Meal Collection)
Mashed potatoes are almost a standard among holiday meal preparation. My mother and father both are excellent home chefs and each make their potatoes just slightly different but it is a near certainty that at the holidays….a mashed potato will be plated and served. Here we will review one of my many favorite recipes for a mashed potato where we will cream the potato with a sour cream to give the potato a nice European old world flavor. Let’s make sour cream mashed potatoes for our holiday menu.
Among the type of potatoes (starchy, waxy and all purpose) we will choose a starchy or all purpose potato for our mashed potatoes. I like Yukon Golds or Russets for my mashers. The Russet will make a thick starchy mash and the Yukon Gold a smooth thin mash….both are delicious. We will mix these two types for our recipe. You will find a great taste in your mashed potatoes.
2 pounds Yukon Gold potatoes, peeled and cut into quarters
2 pounds Russet potatoes, peeled and cut into quarters
Kosher salt
Freshly ground black pepper
1 cup heavy cream
1 cup sour cream
3 tablespoons unsalted butter
2 tsp chopped parsley or chives
4 tsp chopped bacon (make some bacon bits)
Place the potatoes into a large pot filled with enough water to cover the potatoes
Add 2 tbsp salt
Bring to a boil over medium-high heat
Cook potatoes until tender, about 20 minutes.
Drain and set aside
In a medium sauce pan heat the cream, butter and sour cream.
Place potatoes in a mixing bowl
I will mash my potatoes with several tools….first I use a slotted spoon and crush them in my mixing bowl
Next I use my masher to squish the lumps out of the potatoes
Finally I will go back to my slotted spoon and whip up the potatoes
Add the hot cream mix and season with salt and pepper to your taste
Place in a serving bowl and top with parsley /chives and bacon bits
Serve with butter and more sour cream on the side…. this is a very delicious potato dish….. Enjoy!
