Sweet Potato Casserole (Holiday Meal Collection)
Here is the second side dish in my holiday meal collection. As previously offered… I am proactively setting the stage for all the holiday recipes that you might find on my menu. In my home we have at least two big holiday meals during that chilly, wintery season…I will regularly offer a Thanksgiving Day meal and Christmas meal. Let’s make some Sweet Potato Casserole, Chef Gosselin style!
2 ea man sized sweet potatoes (washed, peeled. cut into bite sized pieces)
1/2 cup brown sugar
1/8 tsp ground cinnamon
1/4 tsp vanilla extract
1 egg (beaten)
2 tsp all purpose flour
1/8 tsp salt
2 pinches nutmeg
4 patties butter (melted)
1/4 cup chopped toasted pecans or almonds (pecans are traditional)
2 cups of mini marshmallows
In a med sized stock pan, place the cubed sweet potatoes
Add enough water to just cover the sweet potatoes
Bring the water to boil, cook the potato cubes for about 5 min
Remove potatoes from heat and drain
Place cooled potatoes in mixing bowl
Add all remaining ingredients (except marshmallows) and gently toss to coat the potatoes
Place potato mix in a glass covered baking dish
Bake 350F for 30 min
Remove cover and add marshmallows and continue to bake until the melting and a light brown forms on marshmallows
This is another powerful table attraction at dinner time. ENJOY!
