Lemon Tofu Cheese Cake ChooseMyPlate Recipe


Here is my proof that you can have your cake and eat it too on a reduction plan. The Tofu Cheesecake sounds absolutely not right but work with me here.  As you guide and food guru it is my task to pull together recipes that make you want to continue on a wellness program and I have and will make this repeatedly in my adventure to shed the third person hanging on my bod. If I am munching this you might find it beneficial too. Let’s make some Tofu Cheesecake… in many fashions!

This counts as a protein so you can use it as a meal item at breakfast….it uses your flat bread cracker too…keep that in mind


Tofu is made from soybean curd. It is a bland tasting,  whitish jello looking food item that has its ups and downs in recipe popularity. If you handle and prep it properly the tofu takes on the flavors of the foods and ingredients it touches. It is high in protein and low in calories. I will pass along to you….several recipes, including tofu desserts. The recipes will be different from the norm and if you work it properly you will find tofu to be a nice diabetic substitute and weight loss ingredient, a tasty treat for us to consider. Let’s make a Tofu Cheese Cake that any person would love to eat.


2 c. Chef Gosselin Cinnamon Flatbread Crackers for crackers crumbs (about 12 crackers)

3 tbs. apple sauce (no sugar type)

3 tsp Stevia sweetener (I use Stevia)


2-½ c. firm silken tofu

6 tbs. fresh lemon juice

3 tsp Stevia sweetener

2 tsp. lemon zest

1 tsp. vanilla

Prepare TOFU….(Very Important)

Tofu comes packed in water. You need to remove water and dry the tofu. I will unpackage my tofu and wrap the block of tofu in some clean cloth. I place this onto a pan and weight the cloth (squishing the tofu). This helps squeeze out the extra water captured inside the tofu. I will pre-prep this tofu about an hour before I need to cook with it.

Pulse the graham crackers, apple sauce, and  sweetener in blender or food processor

Pack the graham cracker mix into 9″ spring form pan that you have coated with cooking spray

Blend the tofu, sweetener, lemon juice, lemon zest, and vanilla in blender or food processor. Blend well and taste. The smooth texture and lemony cheese taste should be nice to your tongue. This is Tofu….and how it works.

Pour the blended mix of tofu into the crust and bake 45-50 minutes or until small cracks start to form around the edges

Let cool and serve topped with fresh fruit like raspberries or strawberries

Why did I use applesauce in place of oil in my crust???? It is an old Graham Kerr cooking tip that I have used in my diet recipe substitution for many years. I was once a grand adopter of those early cooking shows and Graham Kerr was a founding father of lite cooking. Thank you once again Graham…you pointed my attention to the kitchen and now I just cannot get out…heheheheheheh
