Chocolate Tofu Pudding -ChooseMyPlate Recipe
Diabetics and weight loss recipes are often a complete farse. They have no fortitude and fail to excite us enough to put the bland stuff in our mouths. This dessert recipe is the real McCoy… you will find that it is more exciting and has a smooth creamy and chocolate taste that satisfies. The sugar is removed and protein is fortified making this a very filling menu item. It is a great between meals snack and a fine after dinner item. It can be frozen and made into a popsicle and eaten as a frozen dessert. All around I think this will be a favorite in any plan that is a no sugar, low calorie menu. Let’s Make a Chocolate Tofu Pudding…..and as a kicccccckkkkkker…..you can add banana if you need a variation.
12 oz silken firm tofu
5 tbsp unsweetened cocoa powder
1/8 tsp Cinnamon, ground
3 tsp Stevia sweetener
2 tsp pure Vanilla extract
1/4 cup Milk
Place the tofu, sweetener, cocoa powder, milk, and cinnamon into food processor or blender
Pulse and then puree until smooth
Pour into ramekins or serving cups
Refrigerate for 2-3 hours before serving
I have played with this recipe several times. Once I made a half packet of unflavored gelatin and some milk. I added the cooked and thickened milk/gelatin to the food processor and blended it in…. hmmmmmmm…. different. Just a thought if you want really thick to make freezer pops
