Crock Pot Pork BBQ
It is the season to start thinking smoker….grilling…BBQ and outdoor functions. I have been using the grill and my gal asked for a pulled pork dish. I have had a very busy week no time to make a nice smoked pork shoulder so I decided to make a pseudo pulled pork meal using the crock pot and a small loin that I had in the freezer. The crock pot is a great invention and it allows us home cooking specialists to get a meal going in the evening and have it ready for packing the next day. The BBQ pork dish turned out to be excellent. Let’s make a pulled pork BBQ using our crock pot.
2-3 pound pork loin
McCormack’s Applewood Rub
1/8 tsp black pepper
12-16 ounces of your favorite BBQ Sauce (I used a Memphis Sweet)
16 ounces of water
This is a simple recipe.
Rub pork loin with McCormack’s Applewood Rub and black pepper.
Place loin in crock pot and set on low
Add enough water to cover the bottom of the crock pot and bring water level up 1/2 inch do not allow water to rinse the pork loin
Cook loin until meat is tender to the fork and ready to shred. (24-30 hours)
Watch and maintain water level do not allow crock pot to go dry
Remove loin from crock pot and place in mixing bowl. Shred with forks.
Add and toss into the shredded pork your favorite BBQ sauce.
Serve with cole slaw, potato salad and hard rolls (see my other posted recipes) Enjoy! This is a delicious dish.
