Egg Salad

Egg salad has been on my mind lately. I am getting my RV ready for its first trip of the season and in preparing for the menu items that I will take on the trip I have wanted perhaps to make some egg salad for a nice sandwich or lettuce topper. Like any salad item, egg salad is a dish that you can show your personal expression. I will make a straight forward simple egg salad that can go between slices of my home made hard roll and have toppers like lettuce, tomato, onion and pickle. You can decide for yourself what melange you want in your egg salad and let us all share with you the creation you made via the comments you leave.

8 hard boiled eggs, chopped finely

1/4 cup minced red onion

1/4 tsp paprika

1/4 tsp ground black pepper

1/2 cup Miracle Whip

Place all the ingredients in a mixing bowl and combine the ingredients well using a spoon.

This is a nice between the bread salad…. Enjoy!
