There is no room for mashed potatoes that no one will eat. I make my mashed potatoes and I serve them for dinner that evening and the left-overs become a fried potato patty for breakfast the following day. Let’s make my sour cream petite red mashed potatoes and watch them disappear from the bowl.
1.5 pounds of Petite Red Potatoes
1/2 cup sour cream
1/4 stick butter (sliced)
SaltÂ
Black Pepper
Boil potatoes in a medium-sized pot until you can easily pass a fork through the potatoes (about 20 min).
Remove from heat and drain potatoes in a strainer
Transfer to a medium-sized mixing bowl and mash with a hand masher
Add sour cream and butter
Add salt and pepper as desired.
Mix with a handheld electric mixer with standard beaters until the potatoes are smooth and creamy
Serve hot and steaming.
I added little fresh chives over my potatoes for the photo but I usually do not add anything extra.
