Chef’s Red Potato Salad

Red potatoes have a great texture and nice consistency for a potato salad. I often use these types in my personal eats. Let’s make a nice potato salad as you find in my home for your family.

 

3 lb. small red potatoes (quartered) 
2/3 cup mayonnaise
1/2 cup sour cream
2 tbsp. apple cider vinegar
1 tbsp. Dijon mustard
1 tsp. kosher salt
1 tsp. ground black pepper
2 stalks celery (chopped  finely)
1/4 c. chopped carrot (finely)
6 slices cooked bacon (chopped)

Place the potatoes in a large pot and cover them with water.

Season with salt.

Bring the water to a boil over high heat

Reduce to a simmer over medium heat.

Cook until the potatoes are fork-tender, about 20 minutes. 

Drain the potatoes and rinse with cold water (I add a little ice to help make this step move quicker)

Cool in refrigerator until completely cold, about 1 hour.

In a large bowl, place the mayonnaise, sour cream, vinegar, mustard, salt, and pepper

Wisk the mix until incorporated. 

Drain the cooked potatoes as you will find some water in the container. 

Add potatoes to own and gently mix

Coat the potatoes well with the mayonnaise mix

Sprinkle the diced bacon over the top of the potatoes

Cover the bowl and return to the refrigerator for 1 hour or more.

Enjoy… I am serving my family some BBQ chicken and these potatoes will make a great side.
