Mediterranean Salad

Mom is an experimenter. I never would think that she might play with CousCous. Here is a salad that one of her friends makes and she must have liked the taste. I have not yet made this in my test kitchen but I bought the ingredients to try it out.

1 cup Cous Cous

1 1/2 cup boiling water

3 tbsp Lemon juice

15 oz can Chickpeas (drained and rinsed)

1 1/4 cup red and yellow bell peppers (diced)

1/2 cup red seedless grapes (quartered)

1/2 cup large leaf Basil (chopped finely)

1/2 cup parsley (chopped finely)

2 ea garlic cloves (minced)

1 1/2 tbsp Olive oil

1/4 cup feta cheese crumbles

Place the CousCous in a metal bowl and add the boiling water

Cover the CousCous and let sit for 20 min

Fluff the Cous Cous with a fork

Add all remaining ingredients to the CousCous and gently toss to incorporate the items well.

Place in the refrigerator and allow to chill for 2 hours

Serve cold.
