Chef Gosselin Goulash
I have been trying to steal some time from each day to get out on my bicycle and pedal a few miles for my health. Part of doing this requires me to think smart in my food prep (which takes up to several hours per day) I decided to make a nice tasty goulash to have as lunches during the week and as a meal that evening. I will share my recipe….it did offer an impressive savory bite.
Let’s make the Chef Gosselin Goulash… it is filling and can feed your family well with low effort.
16 oz box elbow macaroni
3/4 pound ground beef
60 oz tomato sauce
15 oz can chopped tomato
2 qts chicken stock
15 oz shredded Monterrey jack/cheddar cheese blend
2 tbsp sugar
1 tbsp ground black pepper
3 tbsp dried oregano
2 tbsp dried basil
2 tbsp dried parsley
1 package chili mix
3 tbsp minced garlic
2 tbsp cooking oil
1 pkg (12 oz) frozen peppers and onion
1 pkg (12 oz) frozen chopped onion
Place an 6-8 quart stockpot on your stove over medium heat
Add cooking oil and allow to come to temperature
Add frozen onion and pepper onion mix
Saute the veggies until onion is turning translucent
add garlic
Add chop meat
Stir and work chop meat with spatula until it is breaking down and becoming gritty in texture
Add can of chopped tomato and tomato sauce, stir in well
Add all dried herbs, sugar, chili mix and spices
Stir well and blend herbs into sauce
Add chicken stock
Bring to low boil with stirring
Add macaroni, stir well to allow macaroni to fill with the liquid
Turn to low heat (stir occasionally deep and keep the bottom from burning)
When macaroni is nice and tender to your liking…..taste and re-season (use salt and pepper)
Add shredded cheese (reserve a little to top your family meals)
Remove from heat and serve with crusty bread (I used a baguette)
I have all my storage containers ready and transfer the remaining meal into measured lunch containers. Leave out and covered until the containers reach room temp then into the refrigerator for future use. This freezes well.
