Chef Gosselin Baked Cauliflower Cheddar Bites
I got introduced to broccoli and cauliflower bites around Superbowl time. They were good snacks but the salt and the hot pepper sauce flavor just needed some serious attention. I decided that I could make these tasty treats in my style and give my cooking enthusiasts a bit to ponder. Here is a snack that I made last weekend at Sunday afternoon family dinner that really impressed my taste buds and left the NON- cauliflower eating guests a smile. Let’s make Chef Gosselin Baked Cauliflower Cheddar bites
12 oz pkg of frozen riced cauliflower (yhep I found it in my grocery store) You can make this by pulsing 12 oz of fresh cauliflower florets.
1 tsp minced garlic
1 tsp dried oregano
1 tsp dried parsley
1/2 tsp dried basil
1/4 tsp paprika
1/4 tsp ground black pepper
1/4 cup olive oil
2 eggs (beaten)
8 oz shredded sharp cheddar cheese
1 cup seasoned bread crumbs ((optional) but I love this ingredient in this recipe)
Preheat over to 350F (center placed shelf)
Place parchment paper on large baking sheet
Mix all ingredients well in large mixing bowl (incorporate the seasons and herbs over all the cauliflower bits)
Form 1.5 in diameter golf ball bites and place balls on cooking sheet. (I pack the bites well with my hands )
Bake 35 min or until golden brown
Make your favorite dip or use a Franks Red Hot sauce as a topper. WOW these are great and you can make them in many additional fashions, like added sauteed minced onion. They make a great salad topper
