Chef Gosselin Broccoli Bites
Here is a real great treat and salad topper that has my taste buds captivated. I love broccoli… in many fashions and I do love Extra Sharp Vermont Cheddar…specially Cabot’s brand of aged cheddar. When I can marry my broccoli and my cheddar fetish in one food item WOW. These are much like little broccoli tater tots and they are so delicious. You can use a frozen broccoli in this recipe or fresh broccoli, I recommend that you toss the stems and use the florets as the broccoli flavor is more intense ……Let’s Make Chef Gosselin’s Broccoli Bites.
1 lb broccoli florets (steamed, drained, rinsed and cooled to room temperature)
12 oz shredded Extra Sharp Cheddar Cheese (I use Cabot’s Extra Sharp Vermont cheddar)
1.5 cups seasoned bread crumbs
2 tsp minced garlic
2 eggs (beaten)
1/2 cup Parmesan cheese
1 tbsp dried oregano
1 tbsp dried parsley
1/2 tsp ground black pepper
1/4 cup olive oil
Preheat over to 350F (center placed shelf)
Place parchment paper on large baking sheet
Place cool cooked broccoli in food processor or blender and pulse until minced
Mix all ingredients well in large mixing bowl (incorporate the seasons and herbs over all the minced broccoli bits)
Form 1.5 in diameter golf ball bites or tater tot shaped bites and place balls/bites on cooking sheet. (I pack the bites well with my hands )
Bake 35 min or until golden brown
Make your favorite dip or use a Franks Red Hot sauce as a topper. WOW these are great and you can make them in many additional fashions, like added sauteed minced onion. They make a great salad topper
