Chef’s Chocolate Cake
I know it is so common place to go to the grocery store and buy a box of Duncan Hines Supreme Cake mix and just add eggs, oil and water. Well that technique is still used in my household…but let me assure you that I can whip up a nice fluffy cake mix from items I have in stock. Let’s make a delicious Chocolate cake mix using ingredients that we have at home. Learning the base for this recipe can open many new avenues of confection baking when you are in a pinch and do not have the ready mix in the box to use. In real life I use a scale to weigh out my ingredients but I have posted the cup amounts here as not everyone has a scale on the counter.
2 cups all purp flour (sifted)
3 eggs
1 cup granulated sugar
1/4 cup unsweetened cocoa powder (sifted)
1 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1/3 cup unsalted butter (melted)
1 cup warm milk
1 tsp pure vanilla extract
Place all ingredients in a mixing bowl. Using your whip….start on low and blend ingredients. Work up to high and get the batter nice and fluffy.
Place in 8 in greased cake pan and bake in preheated 350F oven for 30-35 min. Use your skewer as a test tool and perform the doneness test by pushing the skewer into the cake and removing. The skewer should come out clean.
Let cake cool on rake.
Remove from pan
