Stuffed Double Baked Potato

There are simply a myriad of recipes and names for a stuffed potato. I am not going to call my favorite recipe by a fancy name… it is a wonderful high calorie, love handle creating comfort food. Should have its own food group… The Stuffed Double Baked Potato Group…. Let’s Make a Stuffed Double Baked Potato!

4 ea Baking Potatoes (Be proud and buy the macho sized Russets if you are planning on serving this as a main course menu like I do)

4 ea small Russet potatoes (peeled then boiled)

2 oz heavy cream

1/2 stick butter

5 oz Sharp Cheddar Cheese

4 slices crisped bacon, chopped into bacon bits

salt and pepper to taste

Place the large Russet potatoes on a baking sheet

Bake the 4 each large Russet potatoes for 1 hour at 500F (rack in center position)

Place the 4 small russet potatoes into a mixing bowl and mash the potatoes with your potato masher until smooth

Add butter and heavy cream, mix with spoon until fully blended, add salt and black pepper to taste

Remove large Russets from oven and allow to cool for about ten minutes so you can handle them

Slice the potatoes lengthwise to form two halves

Place a healthy amount of your mashed potato on each of the potato halves

Add cheese on top of mashed potatoes

Add bacon bits onto the cheese

Place back in oven and bake a second time until the cheese is bubbling hot

Remove from oven and serve with chopped green onion and sour cream for a delicious meal.
