Banana Muffin Cheese Cake
I could not really make this cake come to reality by giving it a name. So let me just blog you through it. I was going to make a nice set of banana nut muffins. I had some recent disgust with the brand of creamed cheese my wife had bought so I was going to make a nice batter for a cheese cake and place some cheese cake inside my muffins. The batter did not make it into the muffin pan. Instead….. I saw a really sweet spring form pan that my wife bought. I snatched the spring form pan from the storage rack. That is where I just went all chef like and just got out my baking tools. I used my awesome silicone scraper and took some of the prepared banana muffin batter and poured it into the sprayed spring form pan….I pour in some cheese cake batter atop the banana muffin batter….more banana muffin batter onto the cream cheese batter and thing were just good. Then I swirled that all into a fine pattern in the spring form pan. Its baking now. Come on over and lets get a slice and a nice tea going this evening. This will come out as a divine work of baking art. I will see if the decent camera is charged that I might get a few nice photos to load. Seems like you find some spiritual reality out of the photo rather than my explanation. I will placate you.
Sometimes you can go wild and things just agree with your planetoid rotation. At some point perhaps you as my readers will show up at the JGumbos Restaurant on Frankfort Ave in Louisville and taste some of the wild going on that is created there. You might expect things to just fall out of place….like this banana muffin cheese cake. But the planet is in balance there too. The food made is delicious….and you can meet me.

I thought I really shared my almost famous banana muffin recipe. I scanned the list of recipes on this site and I just did not see that recipe. I will scribe it here for you. This is of high value so print it off for your home cookbook. You will need this on hand …. its delicious
2.5 cups all purpose flour
3 over ripe bananas
1 cup brown sugar
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/3 cup canola oil
1 tsp vanilla
2 eggs
1 cup milk (I had to add additional milk to my formulation to get the batter to my working consistency)
Add eggs and brown sugar to the mixing bowl and beat until the sugar/egg mix is fluffing and well incorporated.
Add oil, vanilla, and milk and beat for a few moments
Add all dry ingredients to your mixing bowl and mix on low with your whisking beater until all dry ingredients are wet.
Add peeled ripe bananas and beat until smooth (This is unlike how I make muffins…in a muffin batter you will add the bananas and mix a course batter to give you a deeper banana flavor in your muffin)
Prepare spring form pan by spraying the interior with your cooking spray (I use PAM).
Pour some banana batter into the pan
Pour all the cheese cake batter on top of the banana batter
Pour the remaining banana batter on top of the cheese cake batter (My Cheese Cake recipe link found above)
Use your silicone spatula to swirl through the layers of batter to make a nice swirled mix of the two layers.
One zig zag swirl is enough
Bake in a preheated 350F oven for 40 min and test cake with a skewer or thin knife in the center. Mine was very thick and heavy it took about 60 min to fully bake. The final 20 min I watched the cake by inspecting every 8-10 min for completeness.
Allow the cake to rack cool and refrigerate for 20 min before serving. It is a delicious diversion from the usual. The banana and cheese cake tastes in your mouth together are well paired, like sipping fine wines through courses of great menu items. I had never baked these two flavors in combination in my past… I will do this again and again in the future.
