Candied Toasted Almonds

There are moments of weakness where you just want an indulgence that has no equal. Candied Toasted Almonds are just that good. Let’s make some Candied Toasted Almonds
2 cups whole raw almonds
1 tsp butter
1/2 cup water
pinch of salt
1 cup white sugar
1 tbsp vanilla
1 tbsp ground cinnamon
Toast the almonds in a large skillet using the 1 tsp of butter to help bring the flavor out of the nut. Stir often over medium heat until golden brown.
Place a piece of parchment paper on a cookie sheet to place the almonds on after cooking
Combine remaining ingredients in a large saucepan and heat over med-high heat mixture comes to boil.
Add almonds and reduce heat to medium low.
Use metal or silicone spoon to constantly scrape and stir
NOTE: it is important to keep the almonds moving around in the pan.
Continue to stir and scrape while the mixture thickens
The sugar crystallization will begin quickly, about 30-45 seconds
Continue to stir and flip until dry (it only takes a few seconds).
If almonds are still sticky, continue stirring.
Pour almonds onto parchment paper and spread out to cool.
