BRAZILIAN CARROT CAKE (My mom’s recipe)

This cake is very simple and easy to make, and delicious too. In Brasil is very popular and is made this way, with chocolate on the top. I am sharing my Mom’s recipe. This is the cake I regular prepare for my family.

First of all, preheat the oven at 350F.

In a blender:

2 large carrots peeled and cut in pieces

2 eggs

Blend it until you see there is no more big pieces of carrot (puree). It doesn’t going to be liquid, but not too thick either. If the carrot is too big and you see that is difficult to blend, put some little tinny bit of water, just to help the blender not enough to modify the consistency.

When it is done, put in a bowl and add:

1 cup mayonnaise

1 1/2 cups sugar

1 1/2 cups all-purpose flour

1/2 cup cornstarch

1 Tbsp baking powder

Mix well and put in a baking pan (13 x 9 inches) buttered and floured. Take in the oven to 25- 30 minutes. While the cake is in the oven, is time to make the chocolate cover. Around 22 minutes check to see if the cake is done. Just test with a toothpick, if is not sticky, is done.

CHOCOLATE Topping

6 Tbsp sugar

6 Tbsp cocoa powder

3 Tbsp butter

2 Tbsp milk

Mix all together in a little pan, and place in medium heat and mix until boil, once it boil just mix to one more minute and is done.

As soon that the cake is done, remove from oven and drizzle all that little pan of chocolate over the top, helping smooth with a spatula. Let it cool and enjoy!
