Creamy Southern ColeSlaw
There are several schools of thought surrounding coleslaw. One school says a creamy mayo based slaw is the big wahhh dooo. The other school loves a vinegar slaw. I will offer you both recipes. Let’s make some coleslaw!
Creamy Southern ColeSlaw Dressing
3/4 cup Mayonnaise
1/4 cup Sour Cream
2 tbsp sugar
2 tsp celery salt
1 tsp dry mustard
1/2 cup finely chopped green onion
1/4 tsp paprika
1/2 tsp ground black pepper
1 tsp apple cider vinegar
Salad portion of ColeSlaw
Using a packaged coleslaw mix (14oz) is perfectly fine for this recipe. We are not slaves to the kitchen. I tend to over buy the amount of pre-package mix and it goes bad in my frig. I will use a smaller head of cabbage and shred it along with two carrots. This will make the perfect amount for my slaw dressing.
Place shredded veggies in a large mixing bowl. Drizzle in coleslaw dressing and gently stir with spoon. Add and taste until you are satisfied with the consistency. Adjust the seasoning (salt and pepper) and add more sugar if you like your slaw sweeter. Cover bowl and place in refrigerator for an hour.
Remove from refrigerator and stir again to bring out the earthy flavors of the veggies. This is a delicious side dish or sandwich enhancement…ENJOY!
