Bean Salad
Spring is upon my area and I just want some tasty and refreshing salads. I really do like a nice three or four bean salad. A three bean salad is a great side to almost any off the grill menu and it keeps well in the refrigerator. Let’s make some bean salad.
1 cup fresh green beans,cooked tender, drained and rinsed
1 cup fresh waxed beans,cooked tender, drained and rinsed
1 cup canned red kidney beans, drained and rinsed
1 cup canned garbanzo beans, drained and rinsed
1/2 cup finely chopped red onion
1/4 cup finely chopped celery
1/4 cup fresh parsley, finely chopped
1 tsp minced garlic
1/4 tsp salt
1/4 tsp black pepper
2 tbsp sugar
1 cup apple cider vinegar
1 cup canola oil
Place the vegetables into a mixing bowl and gently toss.
Place the salt, pepper, garlic, sugar, vinegar and oil into a lidded jar and shake until blended. Pour liquid over the bean mix and allow the salad to refrigerate, covered for 4-12 hours. The longer you marinate the bean mix the more the vinegar will move into the beans and give that nice southern flavor. Enjoy… this is a great salad to keep on hand. You can make this with no sugar and no oil for a nice protein rich and low fat between meal filler.
