
My gal was having a craving for a cider doughnut (made those). I on the other hand love muffins. I used my standard muffin recipe and added the apple cider touch. Let’s make some Pecan topped Apple Cider Muffins. They are very good.
4 cups apple cider
1/3 cup Buttermilk
2 cups pecan halves
1 cup granulated sugar
2 teaspoons ground cinnamon,
3 1/2 cups all-purpose flour
2/3 cup light brown sugar, packed
2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon ground nutmeg
6 tablespoons butter, melted and cooled
2 large eggs, lightly beaten
Heat apple cider in a small saucepan over high heat. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced to 2 cup, about 40 minutes. Let cool completely.
In a large bowl, combine flour, brown sugar, baking powder, salt, baking soda, nutmeg and cinnamon.
In a large glass measuring cup or another bowl, whisk together butter, eggs , buttermilk and apple cider.
Pour mixture over dry ingredients and stir using a rubber spatula just until moist and batter like cover and place into the refrigerator until chilled, about 1 hour.
Use a nice super sized muffin pan with liners. Fill each cup to the top and place a nice amount of pecan halves on top.
Bake in pre-heated 350F oven, 30-40 min
Serve warm.
