Chef’s Tortilla Shell Tacos

This is a great recipe to keep close. It is easy to create and can assist you on a low budget to eat like a king yet live on a light wallet.  This formula will feed two in a very robust fashion. Let’s make some ground beef tacos as you see in the photograph that I have shared. 

1/4 pound ground beef

1 can of non-stick cooking spray

4 ea 7″ tortilla shells

1 small package of Mexican cheeses

1 cup frozen peppers and onions or slice them fresh (this is based on how to get out of the kitchen as fast as possible)

1 tsp Taco Seasoning (my recipe found here

1/4 cup water (If you use frozen veggies you can leave this out)

1 tbsp cooking oil

Place oil in a medium-sized saucepan and heat on medium

Add peppers and onions

Sautee until starting to brown

Add ground beef and work well into the pan as to break up the beef into granules with your spoon or spatula

Continue cooking until meat is cooked nicely

Add taco seasoning and stir in until all meat and vegetables are well coated.

Remove pan from heat.

In a large frying pan spray bottom well with non stick cooking spray.

Place pan over medium heat and allow to warm up

Place a tortilla shell in pan and put a nice amount of Mexican cheese on the tortilla shell.

As you see the cheese beginning to melt, place a portion of your seasoned beef mix onto the cheese.

Use a spatula to fold the tortilla over and remove it from the pan and place it on your serving plate or platter.

Repeat the process until you have created 4 ea tacos

Top the tacos with sour cream and sliced black olives for garnish and taste. Serve with sliced lettuce and some salsa if you have that on hand.
