Sweet Strawberry Ricotta on Toast
Even the best mornings, like Thanksgiving Day, require a light yet special moment. I usually enjoy a nice cinnamon bun with coffee. But the Chef is on a low carb weight loss event and doing fine staying right in the food moment on that plan. I want something special and upholding my food box. I am taking a nice low carb WASA cracker… and topping it with a awesome strawberry cheese topping that makes my coffee and I smile. Let’s make a nice, delicious sweet strawberry ricotta cheese topping that is good enough for your any day snacking.
1 cup whole milk Ricotta Cheese
1 cup sliced strawberries
1 tsp pure vanilla
1 tsp Aspartame (nutrasweet or your favorite sweetener)
1 slice of your favorite toast or more….I am using a Wasa Cracker (lower carbs make the Chef a thinner guy (lost 24 pounds already))
Place all ingredients in your food processor and pulse on high until creamy smooth and nice and reddish.
Taste and adjust the sweetness (add a pinch of salt if you want to just kick up the intensity of the sweetness and pulse more to mix in the salt)
Ahhhhhhhh…store the remaining spread in a jar or air tight container. Stores refrigerated for about a week.
