Baked Butternut Squash (Holiday Meal Collection)
Butternut squash is a very special vegetable in my kitchen. I like to serve it grilled, roasted, mashed or boiled….it is an honorable mention by my wife as being a near perfect veggie. Here I will make it simple and buttery (though you go light on the butter as this is already a rich flavor). Let’s make my holiday classic…roasted butternut squash.
1 butternut squash (halved with seeds and pith removed)
2 patties butter
2 pinches salt
2 pinches black pepper
2 pinches nutmeg
Instructions
I just love working with butternut squash. In company of people that are foodies….this is a real treat. Not every host serves a fine simple squash dish that makes your mouth water for seconds.
Place each half on a sheet pan
Add one patty of butter to each squash half
Add a pinch of salt, pepper and nutmeg to each squash half
Bake at 350F for 35 min
That little pinch of nutmeg opens that butternut squash flavor to a new level. While the roasted squash stands on its own that nutmeg makes it so much better.
