Italian Style Squash Medley
There was a side dish that I had always enjoyed during my time at Joe Collin’s Italian Restaurant in Saratoga Springs NY. During the local vegetable season I would buy cases of Yellow and Zucchini Squash and make an Italian stewed side dish that I will share with you. This Italian Squash Medley is a tomato, garlic and onion based dish that gives the sauteed squash a great flavor. Just writing about it is making me hungry.
8 oz. tomato sauce
1 tbsp olive oil
1 cup diced tomatoes
1 sm. onion, slivered
1 med. zucchini, cubed
1 med yellow squash, cubed
1/4 c. celery, chopped small pieces
1/4 tsp chopped fresh basil
1/4 tsp chopped fresh italian parsley
1/4 tsp. salt
1/4 tsp ground black pepper
1 /4 tsp dried oregano
1/2 tsp. garlic , minced
1 oz. Parmesan cheese
Salt and pepper
In a 12-14 inch saute pan on medium add the olive oil.
Add onion and celery. Saute until the onion is clarified
Add both types of squash and toss onion and celery over the squash
Add garlic and continue to saute for another minute
Add fresh diced tomatoes
Add salt and pepper
Add all the herbs
Cook one more minute and add the tomato sauce
Allow to come to a low rolling bubbling and reduce heat.
Taste and re-season with salt and pepper
Serve this with any pasta dish….this even makes a great topper for pasta. Sprinkle each serving with the Parmesan cheese.
