Dough (Pizza, Bread, Rolls)
I told my pal that I posted my dough recipe and I looked back at all my postings. Hmmmmmmmm….. I swore that I have placed this on my blog…NOPE! Sorry Christi but I am making the effort now.
I love baking bread items, pizza included. The house smells so great. You get to take center stage for a short moment as the meal is served ….bake great bread and the meal is smooth and conversation normal….bake crappy bread and you get to bear the wrath. Bread is a root food….civilization spawned as a result of the ability to have a food that could feed and store people so well.
Let’s Make the age old dough recipe then turn that dough into different baked goods
4 cups Bread Flour (I only use bread flour in my dough no All Purpose flour)
1 1/2 cups warm water
2 tsp yeast
1 tbsp honey or sugar
1/2 tsp salt
1 tbsp canola oil or olive oil (use olive oil in pizza dough)
Place flour, salt, yeast, honey, salt and water (in this order) in your mixing bowl.
Using the dough hook , start mixing on low until the dough ball is formed. Move to medium and allow to knead for 5 min.
Take a glass or stainless mixing bowl and spray with your non-stick food spray (I use PAM).
Place kneaded dough ball in the stainless bowl and cover with a dinner plate.
Allow to rise (if room is cold you can place a hot water bath (double boiler style) under the dough bowl to warm the environment in the rising bowl.
When dough reaches double in size punch the dough down with your washed hands
Let the dough rise a second time for a nice light dough
You have now created a really great dough and you can make rolls, bread loaf, pizza or a baguette. this is a basic recipe and the limitation to where you can go from here is only determined by your imagination.
THIS IS THE ADDON SET OF INSTRUCTIONS IF YOU KNEAD the dough by hand
I am adding an extra note on how to modify the technique for hand kneading. There will be some changes so read carefully.
Place flour and salt in your mixing bowl.
Place water, yeast and honey/sugar in a separate bowl or measuring cup.
Stir yeast mixture until yeast fully dissolves. Let rest for about 5 min to allow yeast to start eating the honey. It will start making bubbles.
Add yeast liquid to flour and salt and then begin mixing in the liquid into the flour with your hands to make a dough.
Mix the flour and yeast mixture in the bowl until all the flour is now balling up and transfer this dough lump onto a floured working surface
Work the dough with your palms shoving it into the working surface and rotating, kneading the dough over and over for about 5 min or until it is smooth and pliable. If you need to add more water to make it easier to work with ….add only a teaspoon at a time….and knead again for a few more minutes. You can also add more flour if you make a dough that is too moist.
