Smoked Macaroni and Cheese

I have a small home smoker that offers some cooking pleasure throughout the year. The Mrs requests some smoked macaroni and cheese. I have been playing around with the smoking technique and have a decent handle on how to get some smoke to roll over my tin pan of mac and cheese with out destroying the dish. It took a few tries to get the heat and the smoke balanced properly to make a cheesy and tasty menu item without burning or destroying the look and texture of the cheese. I will use soaked apple wood chips in my smoker. I seem to like that smoke flavor the best on Mac and Cheese. More on this topic as the weekend approaches…. tonight I bake some fresh bread
