I have been asked by my gal to make her a flourless chocolate cake for her upcoming birthday. Not an issue, I have trained for this moment all my youth and I have practiced this many times in my dotage. So Let’s look at the recipe and what makes the flourless cake different from the regular rising cakes. If you have never made a cake like this …not to worry. My recipe is standard and is easy to create. The cake is very rich and very heavy. You will be able to make one cake go the distance in a family setting. I have one bit of advice… use an 8″ round or smaller pan. This cake will work better in the heat if it is created in a smaller pan.

1 cup semisweet chocolate chips or chopped chocolate
1/2 cup unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
3 large eggs slightly beaten
1/2 cup Dutch cocoa powder
1 cup semisweet chocolate chips or chopped chocolate
1/2 cup heavy cream
