
I am going to play a little in the test kitchen today. I was thinking of some wilted greens on an aromatic melted cheese grilled sandwich. We are not talking about a low-calorie bite here. Grilled buttery bread…. melty cheese and some spinach. I can taste it already…. this would pair well with some Italian Wedding soup or minestrone. Just saying! Let’s look at the recipe I have in my head.
As I thought…she loves the cheesy, garlicky taste…. and the kitchen smells so good.
2 oz fresh Baby spinach
1/2 Garlic cloves (minced)
1/8 tsp Kosher salt
1/8 tsp Red pepper flakes
1/2 tbsp Olive oil
2 slices Sourdough bread
2 slices Butter
1/4 cup Mozzarella cheese
1/4 cup Parmesan cheese

Place in a medium-sized skillet over medium heat.
Add the oil, garlic, red pepper flakes, and salt.
Cook while stirring for about 2 minutes.
Keep stirring until garlic is just beginning to brown.
Add the spinach and cook until the spinach is wilted.
Drain in a strainer squeezing out any excess liquid.
Cool spinach mix
Rinse and wipe the pan as you prepare the bread.
Warm pan on medium heat.
Place both patties of butter in pan and lay bread slices on butter
Place cheeses evenly on each slice of bread
Divide the spinach evenly over the slices.
Toast the bread until nicely browned.
Flip one half of the toasted bread onto the other half to form the sandwich.
Sprinkle the buttered sandwich with 1 tsp parmesan cheese.
Serve with your favorite chips and a pickle spear.
I ate all of it!
Yes you did and it was a delicious hot sandwich choice. I would serve this in my restaurant…..if I had one again!
