Basic Pesto

Pesto is a gift from the heavens. The recipe is as ancient as Rome. The combination of basil, garlic, oil, pine nuts, and Parmesan cheese; pesto delivers a fresh taste of a food culture that valued life.

2 cups fresh basil leaves (no stems)

2 tbsp roasted pine nuts

2 large cloves garlic (minced)

½ cup extra-virgin olive oil

½ cup grated parmesan cheese

1/4 tsp kosher salt

 

Do you roast the pine nuts or just process them…..ROAST THEM….. they taste so much better.

Place pine nuts in a skillet on med heat and toss them until they begin to brown. Remove from heat and from the skillet as they will burn easily.

Place the basil, garlic, pine nuts, parmesan cheese and salt in a food processor. Start pulsing and slowly pour oil in the top fill port of the food processor or blender. The green pesto emulsion will form. This is the pesto.

Pesto can be frozen for long term storage.
