My gal asked me to stop frying her fish and find a way to offer a delicious coated cod that would be healthier and offer a nice texture similar to fried. I smiled….I experimented a bit and came up with that delicious meal. Let’s make my Batter Baked Cod sticks…..they are moist and flaky like you would want your fish with a nice breaded coating over the batter.
6 oz Cod Fillet (thawed and patted dry if you are using frozen)
1/2 cup flour (all purpose)
1 cup seasoned OR Panko bread crumbs
salt
ground black pepper
1 tsp Old Bay Seasoning
1/4 tsp Paprika
1/4 tsp dried parsley
1/4 tsp garlic powder
1 egg (beaten) in a good bowl for dipping the fish
Canola Oil Cooking Spray or equivalent (I use PAM)
I slice my cod fillet into nice fish sticks (1x1x4 inch pieces or there abouts) Even cubes will work…
On a dinner plate or pie tin place flour
sprinkle some black pepper and salt on the flour
Add garlic powder and paprika to flour
Add old bay seasoning to flour
Stir flour with fingers or fork to incorporate the ingredients well with flour
On new dinner plate or pie tin add bread crumbs and parsley (I sprinkle a little Old Bay seasoning on the bread crumbs too)
Mix the bread crumbs to incorporate the parsley and old bay seasoning
Dredge the cod pieces in the flour mix
Dip flour coated fish and roll in the beaten egg
Roll coated fish in the bread crumb mix
Place fish on Canola Oil sprayed baking sheet
Spray a little canola oil on the fish tops
Place in 350F degree pre-heated oven for 20 min or golden brown
Serve hot with your favorite sides.
