Batatinhas ao Vinagrete (Vinaigrette potatoes)

2 lb new potatoes

1/2 cup parsley, chopped

1/2 cup green onions, chopped

1 medium onion, thinly chopped

2 tablespoons fresh oregano, chopped

2 garlic cloves, minced

1 teaspoon dried red pepper (to taste)

1/2 cup white wine vinegar

1 cup extra virgin olive oil

salt to taste

wash and brush potatoes very well and cook them under medium heat (important to be under medium heat so they don’t open while they are cooking), in salted water, until they are soft. Drain and set aside until cool enough to be handled.

Meanwhile, mix together all other ingredients in a big bowl. Add potatoes and mix very well. Let them finish to cool in the fridge, covered with plastic wrap, mix well time by time so the season get equally over the potatoes. Serve after 2 days as appetizer. They are really yummy.
