Not being a person that is hard to please in the category of sandwich my mind wandered this afternoon….as there was no gal in the household to keep my creative nature in check. I found some nice bread, a nice avocado, a hard boiled egg and a cucumber. INTERESTED? Well Let’s make a fancy sandwich that may require a name later in its evolution…but for now I just want to munch it.
1 hard boiled egg (thinly sliced)
1/4 cucumber (thinly sliced)
1/2 Avocado (sliced)
2 slices of some nice bread
1 tsp mayonnaise
1/4 tsp Nance’s Sharp and Creamy mustard
salt (to taste)
ground black pepper (to taste)
Place the mustard on one-half of your bread and the mayo on the other half.
Lay cucumbers on the mustard muffin half and egg slices on the mayo bread half.
Place avocados on top of the bread and salt and pepper on that side
Flip the eggs on top of the avocados taste your Masterpiece!
Ahhhhhhhhhhhhhh…I love this ….it is very good. So where can we take this…. I am thinking on another walk in this direction I might place a few red onion slivers on the avocado (red onion might add a nice peak to the egg and avocado).
