Rainy Day Cookie (Bolinho de Chuva)

300 g all purpose flour

5 Tbsp sugar

1 Tbsp baking powder

1/4 tsp salt

1 egg

4 oz french vanilla liquid creamer (or other flavor)

Vegetable oil to fry

In a bowl, add all ingredients and whisk very well to make sure everything is well mixed. It have to be a good consistency of dropping dough.

Heat the oil in medium-low heat, so the cookies fry thoroughly and don’t get raw inside. Drop teaspoonfuls of dough into the oil (not too much at time, 4 or 5, depending the size of the pan) and let they get golden brown, rolling them so they fry equally. Remove them from the oil and drain the excess of oil setting them first in a sieve, and them in paper towel.

When the cookies are all fried,  roll them through a mixture of cinnamon and sugar (a good proportion is 4 parts of sugar to 1 part of cinnamon), and serve with hot cocoa or hot coffee… They are delicious for a cold, rainy day.
